Fresh Passion Fruit is known to be high in vitamin A and Potassium. The
Yellow variety is used for juice processing, while the Purple variety is
sold in fresh fruit markets. This concentrate is "not corrected for acid".
Using the acidity method, the brix would be equivalent to approximately 52.5°.
Most end-users prefer the "not corrected" because it requires less fruit to
acheive the desired brix. Most other producers offer a "corrected for acid"
Passion Fruit. |
